Ingredients

  • 1 cup - raw rice
  • 1/2 cup - moong dal
  • 1.75 cups - sugar candy (Kalkandu)
  • 8 - cardamom pods
  • 15 - cashew nuts
  • 15 - raisins
  • 4 tbsp - ghee
  • 2.75 cups - water

How to Make Kalkandu bhath

  • Heat a tbsp of ghee in a pan.
  • Roast the moong dal in the ghee.
  • Pressure cook the raw rice along with the roasted moong dal with 2 cups of water up to 4 whistles.
  • Heat a heavy bottomed pan and add kalkandu (sugar candy).
  • Add 3/4 cup water so that the sugar candy dissolves.
  • Stir the sugar syrup continuously until the syrup turns sticky.
  • Now add the rice and dal mixture.
  • On a low flame, stir the mixture evenly to blend with the sugar candy syrup.
  • Add 2 tbsps ghee slowly and keep stirring for at least 4-5 mins.
  • Fry cashews in a tbsp of ghee and add to the dal mixture with powdered cardamom and raisins.
  • Serve hot.
