  • 1.5 kg. lamb shanks
  • 4 tbsp. oil
  • 1” cinnamon stick
  • 350 gms. onions, diced
  • 150 gms. dates, pitted
  • 2 tbsp. honey
  • 1 tsp. black pepper
  • ½ tsp. salt
  • Toasted almonds and sesame seeds, for garnish

How to Make Lamb Confit with Dates and Almonds

  • Place lamb, oil, cinnamon and onion in a heavy saucepan and sauté for 30 seconds on high heat.
  • Add enough water to cover the meat.
  • Bring to a boil and simmer gently for about 2 hours.
  • Remove lamb and reduce liquid to 2 cups by simmering further.
  • Return lamb, add dates and honey. Simmer for about 20 mins.
  • Check seasoning and remove from heat.
  • Garnish with almonds and sesame seeds and serve.
