Ingredients

  • 4 - boneless chicken breasts
  • 1/4 cup - chopped onions
  • 1 stalk - chopped cilantro leaves
  • 1 can - chicken broth
  • 2 can - water
  • 2 tbsp - lemon juice
  • 1.5 cups - instant rice
  • 1 tsp - turmeric powder
  • 1 tbsp - mint leaves chopped
  • 6 - green chillies chopped
  • 2 - bay leaves
  • 1/2 cup - thick curd
  • 1/2 tsp - garlic and ginger paste
  • pepper to taste
  • salt to taste

How to Make Lemon Chicken and Rice

  • Place rice in oven proof dish that will hold the chicken in single layer.
  • Sprinkle onion and cilantro over rice. Place chicken over this.
  • Pour broth, lemon juice and water over it, then salt and pepper.
  • Add all the remaining ingredients to the dish.
  • Cover with lid or foil and bake at 350 degrees F until chicken is done and liquid is gone.
  • Should be about 30 to 40 minutes.
  • Serve hot with onion and tomato raitha.
