  • 3 eggs
  • 6 tbsp. sugar
  • 1 tsp. powdered gelatin
  • 4 tbsp. lemon juice
  • 1 tsp. grated lemon rind

How to Make Lemon Mousse

  • Separate the eggs and place the yolks in one bowl, the whites in another.
  • Beat yolks with the sugar until very pale yellow and fluffy.
  • Dissolve the gelatin in 1 tbsp. of hot water and mix with the lemon juice.
  • Add to the creamed yolks with the lemon rind and mix well.
  • Beat whites until very stiff and fold gently into the yolk mixture. Spoon the mousse into a glass bowl and refrigerate for at least 8 hours.
  • Once the mouse is set, decorate with slices of seasonal fruits.
