Ingredients

  • 1 cup - soaked and cooked black eyed beans
  • 2 cups - long grain rice (soaked for 1/2 an hour)
  • 4 tbsp - oil
  • Spices:
  • 1 - bay leaf
  • 6 - cardamoms
  • 6 - cloves
  • 3 inch - thick piece of cinnamon
  • 1/4 tsp - caraway seeds
  • 1 - nut meg
  • 1 - strand mace
  • 1 - star flower
  • Green masala
  • 1 cup - tightly packed coriander leaves
  • 1 inch - ginger
  • 4 cloves - garlic
  • 4 - green chillies
  • 1 - onion, cubed
  • 3 inch piece - cinnamon
  • 10 - cloves
  • Salt as per taste

How to Make Lobia biryani

  • Grind the green masala ingredients to smooth paste.
  • Heat oil in a pressure cooker and saute the spices for 2 mins, add green masala and fry for 3 mins.
  • Add the beans, saute for a while and add 1.5 cups of water and allow it cook on a medium flame. This takes about 30 mins
  • To this, add 3 cups of water, bring the water to a boil, then add the rice, salt, mix well and pressure cook on a low flame for 1 whistle.
