Ingredients

  • 1 medium-sized chicken chopped into medium-sized pieces
  • 3 onions, sliced finely
  • 2 tsp - chopped garlic
  • salt to taste
  • 2 tbsp - chilli powder
  • 2 tbsp - curd or yogurt
  • 2 tomatoes, chopped
  • 2 tsp - coriander powder
  • 1 tsp - cumin powder
  • 1 tsp - pepper powder
  • 1/2 turmeric powder
  • 1/2 mustard powder or paste
  • 1 tsp - chopped ginger
  • 3 tbsp - vinegar
  • 3 tbsp - oil

How to Make Madras Chicken Curry

  • Heat oil in a large pan and saute the chicken till brown.
  • Remove and keep aside.
  • In the same oil, saute the onions, chopped garlic and chopped ginger till brown.
  • Add the chilli powder, coriander powder, cumin powder, turmeric powder, mustard powder, pepper powder, and tomatoes and mix well.
  • Stir-fry for a few minutes till the tomatoes are soft.
  • Add the chicken, salt, curd/yogurt and the vinegar and mix well.
  • Add sufficient water and simmer on low heat till the chicken is tender and the gravy is slightly thick.
  • Serve with rice or chapattis.
