  • 10 slices of bread
  • Filling:
  • 200 g - corn
  • 2 large - chopped onion
  • 1 - chopped capsicum
  • 3 tbsp - tomato sauce
  • 1/2 cup - grated cheese
  • salt to taste
  • 2 tbsp - oil

How to Make Mexican Basket

  • Remove the crust from the slice of bread. Roll the slice until flat and press into the cavities of a greased muffin tray.
  • Heat the oil in a pan, fry onion till golden brown. Add capsicum, tomatoes and fry for 2 min. Add corn and salt
  • Take 2 tbsps of the mixture and spread each slice of bread. Spread a little tomato sauce and sprinkle with grated cheese.
  • Bake in a hot oven for 7-8 minutes till cheese melts. Serve hot.
