Ingredients

  • 1.5 cup - maida
  • 2 tsp - ground cinnamon
  • 1.5 tsp - baking soda
  • 1 tsp - nutmeg
  • 1/2 tsp - salt
  • 3 cups - grated carrot
  • 1.5 cup - sugar
  • 1 cup - oil
  • 1 cup - chopped walnuts or cashew nuts
  • 3 - eggs, beaten

How to Make Microwave Carrot Cake

  • Sift together flour, cinnamon, soda, nutmeg, salt.
  • Mix carrots, sugar, oil, nuts and eggs and blend.
  • Add dry ingredients to the egg mixture and pour into 10 inch pan.
  • Cook on high power in microwave for 10-11 min.
  • If you feel the cake is unevenly cooking, keep changing the position of the pan.
  • When done, the cake will pull away from the edges of the pan.
