  • 1/2 cup - red pumpkin (cut into 1 inch pieces)
  • 2 cups - thick yoghurt
  • 1 - onion, cut into small pieces
  • 1/2 tsp - chilli powder
  • 2 tbsp - fresh coriander for garnishing
  • 1 tbsp - oil
  • 1/2 tsp - mustard seeds
  • 1/2 tsp - split urad dal
  • 2-3 red chilli (dried)
  • a few curry leaves
  • a pinch of asafoetida
  • salt

How to Make Microwaved red pumpkin

  • Keep the red pumpkin covered in a microwave bowl and microwave for 3-4 mins.
  • Mash the cooked red pumpkin well. Allow it to cool.
  • After it cools down, add yogurt, salt, chilli powder, cut onions and mix it well.
  • Heat oil in a pan and add hing, mustard seeds, curry leaves and urad dal. When it turns slightly brown, add the yogurt-pumpkin mixture to it.
  • Garnish with coriander and serve.
