Ingredients

  • 2 cups - basmati rice
  • 1 cup - paneer (cubed)
  • 1/2 cup - soya chunks (cooked)
  • 1 - onion (chopped lengthwise)
  • 1 - green chilli (slit)
  • 1 tsp - cumin seeds
  • 1 bay leaf
  • 1 cup - yogurt
  • oil as needed
  • salt to taste
  • To grind: 1 cup - mint leaves (chopped)
  • 8 - pepper corns
  • 1 tbsp - fennel seeds
  • 2 - cloves
  • 1/2" stick - cinnamon
  • 1/4 cup - grated coconut
  • 2 - dry red chillies

How to Make Mint, Paneer and Soya chunks Pulao

  • Mix the ingredients listed for grinding.
  • Add a few drops of water and grind into a fine paste. Keep aside.
  • Soak the basmati rice for 15 minutes in enough water.
  • Heat enough oil in a pressure cooker. Add the cumin seeds, bay leaf and fry.
  • Add the chopped onion, green chilli and salt and saute for a few minutes.
  • Add the cooked soya chunks and paneer cubes and saute for a few minutes.
  • Add the paste and cook for a few more minutes.
  • Add the yogurt and water and bring to boil.
  • Add the soaked basmati rice to the pressure cooker, stir and close the cooker. Pressure-cook for up to 3 hisses.
  • Serve hot with raita of your choice.
