Ingredients

  • 1 cup gram flour
  • 10-12 fresh large omam leaves, finely chopped
  • 1 tbsp coriander leaves finely chopped
  • 1 onion finely chopped
  • 2 green chillies finely chopped
  • 1/4 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 3-4 pinches asafoetida
  • salt to taste
  • oil to deep fry

How to Make Omam Leaf Bhajias

  • Sprinkle a little salt on chopped onion. Keep aside for five minutes.
  • Sprinkle gram flour, coriander and omam leaves over onions.
  • Add all other ingredients, except oil for frying.
  • Mix gently with hand.
  • Heat oil in a frying pan and allow it to smoke lightly.
  • Pour 1 tbsp oil over batter.
  • Mix again, dropping small dumplings of dough into oil.
  • Deep fry on medium-low heat till crisp and golden.
  • Drain and place on absorbent kitchen paper to remove excess oil.
  • Serve hot with tamarind or green chutneys.
