Ingredients

  • 250 g - brinjals (long).
  • 8 to 9 cloves - garlic.
  • 50 g - groundnuts.
  • 3 - tomatoes, medium sized, pureed.
  • 2 - potatoes, large.
  • 1 - onions, large, ground.
  • 1 to 2 - green chillies.
  • 1 tsp - turmeric powder.
  • 2 tsp - red chilli powder.
  • 2 to 3 tsp - coriander powder.
  • 2 cups - water.
  • 2 tbsp - oil.
  • coriander leaves for garnishing.
  • salt to taste.

How to Make Peanut Brinjal

  • Soak groundnuts in water for half an hour.
  • Remove skin and grind to a fine paste.
  • Fry this paste nicely till brown.
  • Cut brinjals and potatoes lengthwise and saute in a little oil.
  • Fry ground onion till golden brown.
  • Add garlic paste and fry. Add fried groundnut paste.
  • Add turmeric powder, red chilli powder, salt and coriander powder mixed in a little water.
  • Add tomato puree and cook for a little while.
  • Add fried brinjals and potatoes.
  • Add 2 cups of water.
  • Cook covered till brinjals and potatoes are tender.
  • Garnish with coriander leaves.
  • Serve hot with rotis/rice.
