Ingredients

  • 1.5 cups - Long grain rice
  • 1 cup - Tomato puree
  • 2 - Onions, chopped
  • 2 - Green chillies, slit
  • 1/2 tsp - Ginger paste
  • 1/2 tsp - Garlic paste
  • 1 - Spring onion bunch, chopped finely
  • 1 tbsp - Coriander, finely chopped
  • 1/2 tsp - Clove-cinnamon powder
  • 1/4 tsp - Garam masala
  • 1 tsp - Red chilli powder
  • 1 tsp - Sugar
  • 1 tsp - Tomato sauce
  • Salt to taste
  • 2 tbsp - Butter or oil.

How to Make Perky Tomato Rice

  • Wash and soak rice for 30 mins.
  • In the meanwhile, heat oil in a pan and add the ginger-garlic paste and stir.
  • Add the chopped onions, green chillies and stir fry until light pink.
  • Add all the dry masalas, sugar, salt and mix well.
  • When the oil separates, add rice to it.
  • Mix well, add the tomato puree and sauce and boil it.
  • Now add 1.5 cups of water and let it boil.
  • Cover, and simmer on low fire until almost cooked.
  • Just before it's fully cooked, add the spring onions, and coriander.
  • Stir gently, and let it dry.
  • Serve hot.
