  • 750 gms. can of pineapple
  • 1 green pepper (capsicum), blanched, seeded and sliced
  • ¼ cucumber, diced
  • 50 gm. Sultanas
  • 1 lettuce, washed and shredded
  • 2 tbsp. mayonnaise

How to Make Pineapple and Pepper Salad

  • Drain the pineapple and reserve the juice. Mix the pineapple pieces with the peppers, cucumber, sultanas and lettuce.
  • Combine the pineapple juice and mayonnaise and pour over the salad and toss well. Serve chilled.
