Ingredients

  • Basmati rice - 2 cups
  • Spinach - 2 cups (finely chopped)
  • Red chillies - 5
  • Coriander seeds- 2 tbsp
  • Coconut -1/2 cup
  • Garlic - 4 flakes
  • Mustard seeds - 1 tsp
  • Urad dal - 2 tsp
  • Onion - 2 large (1 chopped lengthwise)
  • Water - 3 cups
  • salt to taste
  • Ghee - 2 tbsp
  • Coriander leaves - a few
  • Cashewnuts (roasted in ghee) - a few

How to Make Plain Spinach Rice

  • Wash the rice 2 or 3 times and soak it for 15 minutes in 3 cups of water. Pressure cook the rice with a little salt.
  • Grind coconut, coriander seeds, red chillies, garlic, one chopped onion and coriander leaves to a paste.
  • Add 1 tbsp oil in a pan. Add mustard seeds, urad dal and fry the other chopped onion until golden brown.
  • Then, add the spinach to it. Close and cook for 5 minutes.
  • Once cooked, add the ground paste, chopped spinach and salt. Mix thoroughly.
  • Add this to the cooked rice. Add ghee and mix well.
  • Garnish with cashewnuts.
