  • 5 large potatoes, boiled, peeled, ground to a paste
  • 1 coconut, grated, ground coarsely
  • 1/4 kg sugar
  • 1 cup cream
  • 1 tsp - cardamom powder
  • 6 tbsp - ghee
  • 2 tbsp castor sugar

How to Make Potato fudge

  • Mix potato paste, coconut, sugar and cream.
  • Heat 3 tbsp - ghee in a pan and add the above mixture. Stir fry till pink, adding castor sugar, cardamom powder and all the remaining ghee except 1 tsp.
  • When the mixture becomes a ball, remove and put into a ghee-greased platter.
  • Cool and cut into diamond shapes with a greased knife.
  • Serve on a bed of rose petals.
