  • 30 gms - butter
  • 350 gms - zucchini, thinly sliced
  • 2 potatoes, thinly sliced
  • 500 gms - pumpkin, thinly sliced
  • 2 spring onions, thinly sliced
  • 3/4 cup - grated cheese
  • Pepper to taste
  • 1 tsp - dried thyme

How to Make Pumpkin and potato bake

  • Melt the butter in a microwave-safe bowl on High for 30 seconds, add the spring onions and cook on High for 2 mins.
  • In another microwave-safe dish, layer slices of potato, pumpkin, spring onions and zucchini, finishing with a layer of potato.
  • Sprinkle cheese, pepper and dried thyme over it.
  • Cook on Medium for 30 mins.
