Ingredients

  • 1 cup - pumpkin puree
  • 1.5 cups - milk
  • 1 - egg
  • 2 tbsp - oil
  • 2 tbsp - vinegar
  • 2 cups - all - purpose flour
  • 2-3 tbsp - sugar
  • 2 tsp - baking powder
  • 1 tsp - baking soda
  • 1 tsp - all spice, ground
  • 1 tsp - ground cinnamon
  • 1/2 tsp - ground ginger
  • Salt - a pinch

How to Make Pumpkin Pancakes

  • Mix the dry ingredients together (flour, sugar, baking powder, spices and salt) and whisk thoroughly.
  • Mix the wet ingredients (pumpkin puree, milk, oil, egg, vinegar).
  • Combine the two and mix to ensure that there aren't any dry lumps.
  • Heat a frying pan, oil it lightly and add 1/4 cup full of batter into it.
  • Don't spread like a dosa. Cover and cook for a minute.
  • Once the bubbles start appearing, flip and cook for another minute.
  • Serve hot with butter and syrup of your choice.
