Ingredients

  • 2 cups - boiled rice
  • 4 - green chillies
  • Curry leaves
  • 1 onion (finely chopped)
  • 1 tbsp - grated fresh coconut
  • 1/2 tbsp - coriander (finely chopped)
  • 1/4 tsp - cumin seed
  • 1/4 tsp - mustard seeds
  • 1/4 tsp - urad dal
  • 1/4 tsp - turmeric powder
  • 2-3 pinches of asafoetida
  • salt to taste
  • juice of half lemon
  • 1 tbsp - oil

How to Make Quick Lime Rice

  • Heat oil in a heavy bottomed pan and add cumin and mustard seeds, and dal.
  • Add green chillies, curry leaves, onions, asafetida.
  • Cook till onions are light pink.
  • Add rice, turmeric, salt, lemon, coriander, and coconut.
  • Stir gently till well mixed.
  • Cover and simmer till steaming hot.
  • Serve hot with potato chips.
