  • 1 cup - thick cream
  • 350 to 400 g - pasta of your choice (boiled and drained)
  • 1/2 cup - butter
  • 1/2 cup - toasted walnuts, coarsely ground
  • 250 g - soft cheese, cut into pieces
  • salt and freshly ground pepper to taste
  • chopped parsley or coriander leaves

How to Make Soft Cheese Sauce

  • Pour the cream into a pan and bring to a boil.
  • Boil on low heat for several mins. until the cream thickens and reduces to half the quantity.
  • Add butter, letting it melt slowly into the cream, keep stirring. Keep warm over low heat.
  • Add the cheese to the cream, stir until the cheese is partially melted.
  • Season with salt and pepper to taste, toss in the walnuts just before mixing in the sauce into the pasta.
  • Garnish with parsley or coriander leaves.
