  • 1/2 kg - mixed vegetables (peas, cauliflower, French beans or any seasonal vegetables)
  • 1/2 cup - fresh coconut (scraped)
  • 1 large bunch each - mint and coriander leaves
  • 3 - green chillies (chopped)
  • 1/2 inch piece - ginger
  • 2 cloves - garlic
  • A few peppercorns
  • 1/2 tsp - cumin
  • A small ball - Tamarind
  • 1 - large onion (chopped)
  • Salt to taste
  • Curry leaves (optional)
  • 1 - large tomato (optional)

How to Make Special Vegetable Curry

  • Cut the vegetables into small pieces and set aside.
  • Grind together the coconut, coriander, mint leaves, green chillies, ginger, garlic, peppercorns, cumin and tamarind.
  • Fry the onion in oil or ghee till brown, then fry the vegetables lightly.
  • Add the ground masala, salt, tomato and the curry leaves.
  • Cover with water and cook till the vegetables are tender.
