Ingredients

  • 1/2 kg - poha (thick ones)
  • 2 - medium sized onions
  • 2 - medium sized potatoes
  • 3 to 4 tbsp - green peas
  • 1.5 tsp - mustard seeds
  • 5 to 6 - green chillies
  • 1.5 tsp - turmeric powder
  • 2 to 3 tbsp - coriander leaves (finely chopped)
  • 6 to 7 tbsp - oil
  • 1 - capsicum
  • 1 - lemon juice
  • 1 - carrot
  • Few curry leaves
  • Salt to taste

How to Make Special Vegetable Poha

  • Wash the poha very well and drain out all the water and keep aside.
  • Heat oil in a kadai, add mustard seeds. When they splutter, add finely chopped green chillies, onions, potatoes, carrot, green peas and curry leaves.
  • Saute it till the onions are light pink in colour and the vegetables are a little tender.
  • Add poha, salt to taste, turmeric powder, finely chopped coriander leaves, lemon juice and water. Mix well.
  • Let it simmer for 5 mins and serve hot.
