Ingredients

  • 350 to 400 g - cooked pasta
  • 1/2 cup - peanut butter
  • 1/2 cup - chopped parsley or coriander leaves
  • 1/4 cup - soya sauce
  • 2 tbsp - lemon juice
  • 3 to 4 tbsp - sesame oil
  • 1 tsp - hot chilli sauce
  • 1 tsp - red chilli powder
  • 5 spring onions, washed, trimmed and cut diagonally into 1.5 cm pieces
  • 2.5 tbsp - chopped peanuts

How to Make Spicy Peanut Sauce

  • Whisk together the peanut butter, soya sauce and lemon juice until smooth and well blended.
  • Add the sesame oil, hot chilli sauce and the chilli powder, blend and set aside.
  • Before mixing the sauce into the pasta add spring onions and parsley.
  • Add the sauce to the pasta and garnish with chopped peanuts and a few sprigs of coriander.
