Ingredients

  • 1/2 can - Sweet corn
  • 2 - Green chillies
  • 1 sprig - Mint leaves
  • 1 tsp - Coriander leaves
  • 1 slice - Bread
  • 1 cup - plain flour
  • Salt
  • Oil
  • 1/2 tsp Baking soda

How to Make Sweet Corn Waffles

  • Drain corn, saving the liquid in a vessel.
  • Transfer drained corn to an electric mixer.
  • Add green chillies, mint leaves, coriander leaves.
  • Crush well and add to saved corn liquid.
  • Run 1 slice of bread in mixie, to make crumbs.
  • Add to corn mixture.
  • Add plain flour, salt, 1 tbsp oil, baking soda.
  • Mix well till no lumps of flour remain.
  • Heat a greased waffle iron, do not overheat.
  • Pour a ladleful of mixture in centre, depending on size of iron.
  • Close and allow to become crisp and golden on both sides.
  • Serve hot with chutneys or ketchup or even honey.
