Ingredients

  • 400 g - kolakeshiya or sweet potato
  • 2 tbsp - ginger paste
  • 1 tbsp - cumin seeds
  • 2 tbsp - cumin powder
  • 1 tbsp - red chilli powder
  • 6 - green chillies, slit
  • 1 tbsp - turmeric powder
  • 1 tsp - garam masala powder
  • 1.25 cups - coconut milk
  • 2 tsp - sugar
  • 3 tbsp - oil
  • 2 tsp - ghee
  • salt as required

How to Make Sweet Potato Malai

  • Boil sembu or sweet potato, remove the skin and cut into medium slices.
  • Blanch in turmeric water.
  • Heat oil in an oven-safe bowl, add sugar and cumin seeds.
  • Saute for 1 minute. Then add ginger paste, cumin powder, red chilli powder and saute again for 5 minutes.
  • Add the sweet potato and slit green chillies. Stir for 2 minutes.
  • Pour the coconut milk and cook for 2-3 minutes, then add salt.
  • Sprinkle garam masala and ghee and serve.
