Ingredients

  • 5- large red tomatoes
  • 2 tbsp - ghee / oil
  • 1/2 tsp - jeera ( cumin seeds )
  • 10- curry leaves
  • 2- green chillies, chopped
  • 1/4 tsp - hing ( asafoetida )
  • 1/2 tsp - red chilli powder ( or to taste )
  • 1 tsp - sugar ( or to taste )
  • 3/4 tsp - salt ( or to taste )
  • 1/2 tsp - turmeric powder
  • 1/2 tsp - coriander powder
  • 1/2 tsp - jeera powder
  • 1/2 tsp - garam masala powder
  • 1/2 cup - water
  • 2 tsp - fresh coriander leaves

How to Make Tamatar Ki Launji

  • Blanch tomatoes in boiling water for 1 - 2 minutes. Drain and remove skin.
  • Chop into small pieces.
  • In a pan, heat ghee / oil and add jeera.
  • When brown, add hing and fry a little.
  • Add curry leaves, green chillies, chopped tomatoes and all the spice powders.
  • Add 1/2 cup water, salt to taste and cook for 5 - 8 minutes.
  • Serve hot, garnished with chopped fresh coriander leaves.
