  • 2 Medium Size Potatoes (peeled but not cooked)
  • 1 cup - Grated coconut
  • 2 tsps - Yellow Curry paste
  • 1 tsp - Sugar
  • 1/2 tsp - Crushed Red Chilli powder
  • Salt to taste

How to Make Thai-Vegetarian Gang Gar Ree

  • First grind the grated coconut with water and then filter it.
  • Keep the coconut milk aside. It should be thick. Don't make it too thin.
  • Then cut the potatoes into thin round slices and keep it aside.
  • Now take the pan and add half of the coconut milk and add two tsps of yellow curry paste (recipe given below).
  • Then allow it to boil until you see the oil separate from the coconut milk.
  • Then add sugar and stir for 2 minutes.
  • Add the sliced potatoes and the rest of the coconut milk and salt.
  • Heat it covered with a lid until the potatoes are cooked.
  • Reduce the heat to low and keep it for 10 minutes.
  • You can add the red chilli if you want it to be spicy now.
  • Before serving, decorate it with sliced green chillies.
  • This can be served with plain white rice.
  • Yellow curry:
  • Grind cumin seeds, coriander seeds, turmeric powder in the ratio of 2: 2: 1 in a blender with/without water.
