  • tomatoes - 2, sliced
  • cucumber - 1 small, sliced
  • For brinjal spread:
  • brinjal - 350 gm
  • lime juice - 1 tbsp
  • sesame seeds - 2 tbsp, roasted
  • garlic - 2 large pearls
  • olive oil - 1 tbsp
  • finely chopped parsley - 1/2 cup
  • salt to taste

How to Make Tomato and Cucumber Sandwiches with Brinjal Spread

  • Smear brinjals with little oil and bake in a hot oven till soft.
  • Peel the skin.
  • Chop the flesh and blend in a mixer.
  • Blend in the lime juice.
  • Crush garlic and sesame seeds to a paste and mix in.
  • Add salt to taste.
  • Add parsley.
  • Spread on bread. Add chopped cucumber and tomatoes to make sandwich.
