  • Medium sized Tomatoes - 6
  • Medium sized brinjals - 2 (chopped)
  • Small onion - 1 (chopped)
  • Capsicum - 1 (chopped)
  • Garlic - 2 cloves (minced)
  • Pepper powder to taste
  • Salt to taste
  • Oil to fry

How to Make Tomatoes stuffed with vegetables

  • Slice top from tomatoes and scoop out flesh. Mix the tomato flesh with remaining vegetables and seasoning.
  • Heat oil. Add vegetable mixture and fry till cooked and almost dry.
  • Stuff the tomatoes with the mixture and place under a grill for one minute.
  • Serve hot.
