  • 100g - red pumpkin
  • 100g - sweet potato
  • 100g - potato
  • 100 g - ash gourd
  • 100g - yam
  • 100g - string beans ( karamani, barbathi )
  • 100g - gherkins ( kovakkai, tondli)
  • 1 - coconut, large
  • 2 tbsp - rice flour
  • 6-8 - green chillies
  • 1/2 tsp - asafoetida
  • Salt, to taste

How to Make Val Val

  • Peel and cut pumpkin, sweet potato, potato, ash gourd, yam into thin and long pieces like finger chips.
  • Cut beans into 2 inch long pieces. Cut gherkins into quarters, lengthwise.
  • Grate the coconut and extract 1 cup first milk and 3 cups of second milk.
  • Slit the green chillies.
  • Combine all the vegetables and chillies with the second coconut extract. Simmer till the vegetables are cooked.
  • Add salt, and rice flour, mixed with 1/2 cup of water. Simmer for 2-3 minutes. Add the first extract of coconut and asafoetida.
  • Just as it begins to boil, remove from fire. Serve with steamed rice.
