Ingredients

  • Bisquick (or similar) Baking Mix - 2 cups
  • 1 cup - steamed mixed vegetable (such as broccoli, carrots, peas, corn and cauliflower), cut into small pieces.
  • 2 - eggs
  • 3 - tbsp oil
  • 3 tbsp - onion, finely chopped
  • 1 tsp - red chilli powder
  • Salt - to taste
  • 1.5 cup - milk

How to Make Vegetable Muffin

  • Beat the eggs thoroughly. Add all the ingredients and milk to make thick fluffy consistency batter.
  • Grease the muffin pot (usually it will hold 12 muffins), and fill three-fourth of each cup with the batter.
  • Bake it for 15 mins at 190 degrees C.
  • Let it cool and remove muffins from the cups.
  • Serve hot with chutney or ketchup.
