Did you hear that right? A vegetarian omelette? Yes! Made with leftover chapatis or rotis, this unique dish of vegetarian omelette makes for a great, filling and tasty breakfast dish and can be whipped up with just a handful of ingredients.

Firstly, you need to make a paste consisting of 2 tsp ajwain (carom seeds), a bunch of coriander leaves, 3 green chillies, 1 tbsp sooji, 6 tbsp gram flour or besan and mango powder or amchur to taste. Next, take heated oil on a tawa, dip the rotis into the delicious and tangy mixture made earlier, making sure that you cover both sides. Cook on a low flame, flipping occasionally to make sure that both sides get cooked. After the chapatis have been cooked, cut it into four pieces and serve with ketchup or chutney.

Cooking tip: Add spinach leaves, methi leaves or even paneer to the mixture and make the recipe richer!

How to Make Vegetarian Omelette for Breakfast

  • Make a paste of all the ingredients except chapattis.
  • Heat oil on a tawa, dip the rotis in the above mixture - covering both sides - and cook on a low flame on both sides.
  • Cut into four halves and serve with chutneys or ketchup.
  • Tip: Make it richer by adding paneer, methi/spinach leaves to the besan batter.
