  • 1 cup - condensed milk
  • 1 cup - coconut milk (thick)
  • 2 - egg yolks
  • 1 cup - cream
  • 1 tbsp - gelatine
  • 1 tsp - vanilla essence
  • few drops red colour
  • raspberries to garnish

How to Make Very Berry Raspberry Ice-Cream

  • Set refrigerator control at its coldest.
  • In a bowl, soak gelatine in 2 tbsp water for 5 minutes.
  • Place the bowl in a shallow pan containing hot water.
  • Stir gelatine till it dissolves.
  • In a mixing bowl, whisk cream till thick and fluffy.
  • Whisk in condensed milk, egg yolk, gelatine, coconut milk and essence.
  • Add colour.
  • Freeze in ice-trays, until almost firm.
  • Remove from freezer.
  • Beat well and refreeze until firm.
  • Serve garnished with raspberry pieces.
