  • 1 can - white bean soup (medium can)
  • 1 cup - red and green bell pepper pieces
  • 1 cup - corn kernels
  • 1 - onion (chopped)
  • 2 - garlic cloves (crushed)
  • olive oil as needed
  • 2 tsp - corn flour
  • 3 cups - vegetable broth
  • salt as needed
  • pepper powder as per taste
  • 1 tbsp - parsley leaves (chopped)

How to Make White Bean, Bell peppers & Corn Soup

  • Heat enough olive oil and saute the chopped onions and crushed garlic cloves until the onions turn translucent.
  • Drain the canned white beans, add the chopped bell peppers and corn kernels to the sauteed onions and cook for few minutes.
  • Immediately add the white beans and stir for a few seconds. Add the vegetable broth with enough salt and pepper powder.
  • Bring everything to boil and put to simmer. Cook until the vegetables are well done.
  • Make a thin white sauce with the corn flour and water.
  • Add the sauce and parsley leaves to the soup and cook until the soup thickens.
