Ingredients

  • 2 cups - cooked rice
  • 1/2 cup - zucchini (chopped)
  • 1/4 cup - peanuts
  • 1 - onion (chopped)
  • 2 - green chillies (slit open)
  • 1 tsp - garam masala powder
  • 1 tsp - pav bhaji masala
  • Oil as required
  • 1 tsp - cumin seeds
  • 1 tsp - shah jeera
  • A few sprigs - coriander leaves (chopped)

How to Make Zucchini and Peanut Rice

  • Heat enough oil in a microwave safe bowl for 40-45 seconds on high.
  • Add cumin seeds and shah jeera, and cook for a minute.
  • Add onions, green chillies and salt, cook for 5-7 minutes until the onions turn translucent.
  • Add peanuts and cook for 2 minutes.
  • Add chopped zucchini, garam masala powder, pav bhaji powder, and cook for 10 minutes until the vegetables are well cooked.
  • Add cooked rice, chopped coriander leaves and toss everything gently, cook for 2-3 minutes. Serve hot with potato chips or spicy potato roast.
