Ingredients

  • 1 cup - Zucchinis (cubed)
  • 6 - Garlic cloves
  • 1 tbsp - Red chilli powder
  • 1 tsp - Amchur powder
  • 1 tbsp - Mustard seeds
  • 1 tbsp - Fenugreek seeds
  • Oil
  • Salt
  • 1/2 tsp - Mustard seeds for tempering

How to Make Zucchini Pickle

  • Dry roast the mustard seeds, and fenugreek seeds together in a pan, cool and grind to a fine powder.
  • In a bowl, mix the zucchini, red chilli powder, amchur powder, ground mustard-fenugreek powder, and salt and mix it with a wooden spoon.
  • Heat oil, splutter mustard seeds. Add the garlic cloves and fry till they turn slightly brown.
  • Add this tempering to the zucchinis and spices.
  • Mix well and store in an air tight box.
