Ingredients

  • 3 cups - Zucchinis (cubed)
  • 1 - Onion (chopped)
  • 1 - Tomato (chopped)
  • 1 tsp - Mustard seeds + cumin seeds
  • A few curry leaves
  • 1/2 cup - Yellow moong dal
  • 1/4 tsp - Turmeric powder
  • 1/4 tsp - Asafoetida powder
  • Salt
  • Oil
  • To grind:
  • 2 - Dry red chillies
  • 1 tbsp - Black pepper
  • 1 tbsp - Channa dal
  • 1 tbsp - Coriander seeds
  • 3 tbsp - Grated coconut

How to Make Zucchini Poricha Kootu

  • Heat a little oil, and one by one, roast the spices that are to be ground until they turn brown.
  • When it cools, grind it to a smooth paste with enough water and set aside.
  • Pressure cook the moong dal, asafoetida powder, and turmeric powder with enough water, for 3 whistles.
  • Heat oil in a kadai, splutter the mustard seeds, and cumin seeds.
  • Add the onions and tomatoes and salt, and cook.
  • Now add the cubed zucchinis and cook on simmer until it is half done.
  • Add the ground paste, and cooked dal to this, and bring to boil. Reduce the flame and cook until the vegetables are well cooked.
  • Serve with rice, idlis or dosas. This kootu works wonders even with pongal.
