My name is Shalini Shinde, yes a fat and plummy lady all because I love cooking and eating varieties. Anyway, try this recipe " Chicken Chukka". This recipe is a real hot and spicy one, you can always increase the amount of red chilli powder, green chilli as per your taste. It is a dry dish, water is only used to tender the chicken.

Chicken Chukka

Ingredients

Chicken 1 kg (full thighs, breast)
Onions 1/2 kg finely sliced lengthwise
Ginger/Garlic paste 1 tsp.
Green Chilli 5-6 cut lengthwise
Green Coriander finely chopped
Curry leaves 1 stem
Tomatoes 2-3 medium size pureed (if possible used the readymade one small can)
Oil 2 tbsp.
Water 3/4 of glass

Masala:

Red chilli pd. 1 tsp (it depends on your taste)
Turmeric pd. 1tsp.
Coriander pd. 1tsp.
Tandoori Masala 1 1/2 tsp.(mothers recipe)
Red food colour 1/4 of tsp
Salt

Method :

  1. Wash the chicken thoroughly.
  2. Heat oil, add ginger, garlic, onions fry till golden brown
  3. Once above is done add all the masalas except food colour. Fry it with above for few seconds
  4. Add tomatoes puree, green coriander, green chillies. Fry till all the masalas is mixed well
  5. Add chicken & fry with masala for about 5-6 minutes
  6. Add red food colour, curry leaves & water and let the chicken cook till tender. See that the water is completely dried.
  7. Garnish it with green coriander leaves and serve hot with either plain naan or boiled rice.
