Bengali Alu Dum
Ingredients
Baby Potatoes- 1/2 kg.
Medium sized Onions 4
Tomatoes- 3
Turmeric powder- 1tsp
Red chilli powder -2 tsps
Salt to taste
Sugar-1tsps
Cumin seeds- 2tsps
Bay leaves-3
Coriander leaves.- little
Oil -1/4 cup
Ginger-1 inch piece
Method :
- Boil and peel baby potatoes (one whistle in pressure cooker).
- Grind sliced onions ginger cumin seeds to a fine paste.
- In a pan heat the oil. Sprinkle a little salt over the potatoes, and
add to the oil a little at a time. Fry till it becomes slightly red.
- Empty fried potatoes on to a dish. Fry the remaining potatoes
- I n the same oil add the bay leaves, ground masala paste and fry
lightly. Add red chilli powder, sugar and fry till the raw smell goes.
- Add the fried potatoes and the turmeric powder, salt to taste. Cover
and let it simmer for 5 minutes.
- Arrange on to a serving dish and garnish with finally chopped coriander leaves. Serve with Parattas or Rotis or Puris.
