Bengali Alu Dum

Ingredients

Baby Potatoes- 1/2 kg.
Medium sized Onions 4
Tomatoes- 3
Turmeric powder- 1tsp
Red chilli powder -2 tsps
Salt to taste
Sugar-1tsps
Cumin seeds- 2tsps
Bay leaves-3
Coriander leaves.- little
Oil -1/4 cup
Ginger-1 inch piece

Method :

  1. Boil and peel baby potatoes (one whistle in pressure cooker).
  2. Grind sliced onions ginger cumin seeds to a fine paste.
  3. In a pan heat the oil. Sprinkle a little salt over the potatoes, and add to the oil a little at a time. Fry till it becomes slightly red.
  4. Empty fried potatoes on to a dish. Fry the remaining potatoes
  5. I n the same oil add the bay leaves, ground masala paste and fry lightly. Add red chilli powder, sugar and fry till the raw smell goes.
  6. Add the fried potatoes and the turmeric powder, salt to taste. Cover and let it simmer for 5 minutes.
  7. Arrange on to a serving dish and garnish with finally chopped coriander leaves. Serve with Parattas or Rotis or Puris.
