Eggplant Curry
Ingredients
Eggplant 1lb
Onion (medium size) 1
Green chillies 3
Corriander leaves 1/4 bunch
Salt
Garam masala 1tsp
Oil 5tsp
Method:
- Cut the eggplant into half-inch cubes and soak in salted water for ten
minutes.
- Cut the onion and fry it in 2tsp oil till transparent.
- Grind it along with corriander leaves and chillies.
- Heat oil in a pan and fry the ground paste till oil separates. Add the
eggplant and stir.
- Cook covered till the vegetable is cooked.
- Add one tsp garam masala and serve with rice or chappatis.
