I am Chithra Karunakaran, living in the beautiful San Francisco Bay Area. I try out a lot of new receipes from bawarchi, and now here is my contribution.

Eggplant Curry

Ingredients

Eggplant 1lb
Onion (medium size) 1
Green chillies 3
Corriander leaves 1/4 bunch
Salt
Garam masala 1tsp
Oil 5tsp

Method:

  1. Cut the eggplant into half-inch cubes and soak in salted water for ten minutes.
  2. Cut the onion and fry it in 2tsp oil till transparent.
  3. Grind it along with corriander leaves and chillies.
  4. Heat oil in a pan and fry the ground paste till oil separates. Add the eggplant and stir.
  5. Cook covered till the vegetable is cooked.
  6. Add one tsp garam masala and serve with rice or chappatis.
