Corn Paneer

Ingredients

1 cup Frozen Corn thawed in the microwave for 1 minute
3 cups Milk
1 tsp. Lemon juice
2 large Tomatoes diced
1 full tsp. Coriander powder
1 tsp. Jeera (cumin) seeds
1/2 tsp. Haldi (turmeric) powder
3/4 tsp. Lal mirch (paparika) powder
2 tsp. Vegetable oil

Method :-

  1. Bring the milk to a full boil in a vessel. Allow it to cool for 2-3 minutes after taking the vessel off the stove.
  2. Add lime juice to it. Allow it to curdle fully. Then separate the remaining liquid from the curdle.
  3. Set the curdle in a transparent cloth for a few hours.
  4. Press away all the liquid possible by pressing the curdle with some weight . Do it repeatedly 3-4 times.
  5. Within 3-4 hours, curdle turns into paneer/ cottage cheese. If you do not want to undergo this hassle, purchase paneer from any Indian Grocery store. From here on it turns really simple.
  6. Mash the thawed corn in a blender/mixer till it turns into a thick paste .
  7. Heat oil in a pan, once it is heated, splutter jeera (cumin) seeds, in it.
  8. Then add coriander, turmeric and paparika powder and stir for 2 minutes on high flame.
  9. Now add your chopped tomatoes. Stir it for another 4 minutes on High flame.
  10. Reduce the heat and bring it to medium, add mashed corn to the vessel . Stir for another 2 minutes and then add paneer to it. After stirring the whole thing for a minute or two. Leave it on medium heat for about 10 minutes. Your new dinner maincourse dish is all set.
