Hi! My name is Roopa. My email address is roopavernekar@yahoo.com. I am from Auburn, NY. Here is a simple recipe for Spinach Raita. It's tasty and nutritious too and goes well with Parathas or Pulao. My previous recipe was Pumpkin Gojju.

Spinach Raita

Ingredients

Spinach - 1 bunch (about 1/2 Lb)
(You can also use frozen spinach)
Yougurt - 1 cup
Ginger - 1/2 an inch
Green chillies - 2 (or more if you like you raita spicy)
Salt to taste
Oil - 2 tsp
Mustard - 3/4 tsp
Garlic - 2 flakes (optional)
Chilli powder - 1/2 - 1 tsp

Method:

  1. Wash spinach and cut. Grate the ginger and chop green chillies. Boil spinach with the ginger, green chilles and salt.
  2. You can also microwave the spinach. After the spinach gets cool, add the yougurt.
  3. For the tadka, heat oil in a kadai, add mustard. When the mustard begins to splutter, add crushed garlic and fry until the garlic turns light brown in color. Add it to the yougurt mixture.
