Hi, I am Arati Rao, a software consultant. I am enthusiastic about cooking but don't have much time. Hence, I prefer quick-n-easy recipes. Here's my recipe for Greens' Raita, which takes only 10 minutes to make.

Greens Raita

Ingredients

1 bunch palak (spinach) or any greens
1 green chillies
3 cups yogurt (curd) or fresh, thick buttermilk
1/2 tbsp. oil
1/2 a tsp. jeera (cummin seeds)
1/2 a tsp. (optional) red chilli powder
Salt to taste

Method

  1. Cut and boil the greens in water till they are cooked.
  2. Grind the greens in a mixie with the green chillies and a little water till they are totally liquified. If you are using curd, add the curd to the greens before grinding.
  3. Pour out the liquid from the mixie into a vessel. If you are using buttermilk, add it now.
  4. Add salt to taste.
  5. In a small pan, heat oil. Add cummin seeds and wait for a few minutes till they get roasted.
  6. Add red chilli powder to the oil, if you prefer.
  7. Pour the contents of the pan into the vessel.

This serves 4 people. It is great to eat with Pulav or Fried Rice, and easy to make, too!
