I'm Mrs Trupti Bhatkal from Muscat. I'm a housewife. I would like to share with you different types of raitas. These recipes I have learnt from my friend Pushpa Sankolli. The dish goes well with all rice varieties and parathas. I am very sure that all of you will like it.

Palak Raita/ Bitroor Raita

Ingredients

1 small bunch Palak
4 tbsp. grated Coconut
200 gm Curds
1 - tsp. level Mustard seeds
A pinch Hing
1 Green Chilly

Method:

  1. Cook palak without adding water for 5 minutes and keep aside
  2. In little oil fry green chilly till it soft and keep aside. Now in the same oil add hing and mustered seeds when it crackled put into a grated coconut.
  3. Now grind coconut, mustered seeds, hing and green chilly in to a fine paste.
  4. Beat curd and add to the grinded paste. Add salt for taste.
  5. Now chop palak and mix in to curd.
Serve with Pulav or Parathas.

Bitroot Raita

Ingredients:

1 small Bitroot
4 tbsp. grated Coconut
2 Green Chillies
1 tsp. Mustard seeds
2 Red Chillies
200 gm Curds
Few leaves of Curry Patta

Method :

  1. Cook the Bitroot in pressure cooker and grate in to a medium size pieces.
  2. Grind coconut and green chillies (fry in to a little oil) in a fine paste.
  3. Beat curd and mix the grinded paste in to it. Add grated bitroot and mix well.
  4. For tadka, heat oil add mustard seeds, curry patta and red chillies. When it pop put in to raita. Make cool and serve.

Instead of Bitroot, you can use tomatoes or boiled potato cubes or grated cucumber or ladyfinger (Bhindi) for this same recipe. For ladyfinger chop it and roast in the pan till it is red and crisp. But mix this in curd and coconut paste when you serve.
