Matthanga Pachhadi (Pumpkin Raita)

Ingredients

1 small pumpkin (peeled & diced)
4 green chillies
1/2 tsp cumin seeds
4 tbsp grated coconut
1 1/2 cup of beaten curds
Salt to taste

For the seasoning:
1/2 tsp mustard seeds
1/2 tsp urad dal
5-6 curry leaves
2 tsp of ghee or vegetable oil
1 tsp coriander leaves for garnishing

Method:

  1. Boil the diced pumpkins till they are cooked.
  2. Now in a blender grind together the coconut, chillies & cumin seeds to a fine paste.
  3. Mash the pumpkin with a spoon & mix in the ground paste, curds & salt.
  4. Heat the oil or ghee in a pan & when hot enough add in the seasoning ingredients.
  5. Pour this into the pumpkin mix. Mix everything thoroughly once again and garnish it with the coriander leaves.

Goes well with any rice preparation!
