Matthanga Pachhadi (Pumpkin Raita)
Ingredients
1 small pumpkin (peeled & diced)
4 green chillies
1/2 tsp cumin seeds
4 tbsp grated coconut
1 1/2 cup of beaten curds
Salt to taste
For the seasoning:
1/2 tsp mustard seeds
1/2 tsp urad dal
5-6 curry leaves
2 tsp of ghee or vegetable oil
1 tsp coriander leaves for garnishing
Method:
- Boil the diced pumpkins till they are cooked.
- Now in a blender grind together the coconut, chillies & cumin
seeds to a fine paste.
- Mash the pumpkin with a spoon & mix in the ground paste, curds &
salt.
- Heat the oil or ghee in a pan & when hot enough add in the
seasoning ingredients.
- Pour this into the pumpkin mix. Mix everything
thoroughly once again and garnish it with the coriander leaves.
Goes well with any rice preparation!
