I am Vidya Guruprasad from California, USA. In continuation with Diwali Specials I am presenting here a very special Diwali Sweet of Tamil Nadu, called Okkarai. It is like Besan Halwa but very different. You can also check out my previous recipes of Bread Uppuma, Puliadharai or Hot Tamarind, Cheedai - Uppu & Vellam

Okkarai

Ingredients

Besan or Gram Flour - 2 cups
Jaggery or Brown Sugar - 1 cup
Cardamom Powder - 1 tsp
Ghee or Unsalted Butter - 2 tbsp
Sesame / Til Oil - 2 tbsp
Cashew Nut - 1/4 cup

Method:

  1. Take a tbsp of Ghee or Unsalted Butter and Sesame Oil in a pan.
  2. Add Besan to it and roast till Besan turns reddish.
  3. Heat Jaggery in a cup of water separately. Stir till jaggery completely dissolves in water. This mix should be watery. Add Cardomom powder to the jaggery water while it boils.
  4. Add jaggery water to reddish besan while continuously stirring besan.
  5. Keep stirring the mix and continue to add ghee-sesame oil from time to time.
  6. Add Cashew Nuts to it and continue stirring well.
  7. When the smell of fresh besan ceases and the aroma of halwa fills the air, it means the Okkarai is done.

Sesame Oil provides flavour of Traditionally made Okkarai. If it is not available one can use vegetable oil but the end result is not as tasty. It is very important to stir well all the ingredients. Okkarai should be dry and not sticky. Okkarai can be served hot or cold.

Total Time : 30 minutes
