This is Neetu here again from Dubai. Earlier I had contributed for Crispy Aaloo Tikky with Noodles and I got lot of emails from you people saying that you enjoyed my recipe. Here is my one more contribution I hope you will enjoy it.

Gajrella - Punjabi Style (Carrot Halwa)

Ingredients

Carrot 2 Kg
Sugar 2 Cups (or as per your taste)
Khoya 500 gms or 2 litre milk
Cardamom Powder 1/2 tea spoon
Cashews 10 - 15 pcs
Almonds 10 - 15 pcs
Other Dry Fruits
Pure Ghee 2 tbsp
Silver Foil

Preparation of Khoya:

Khoya is made of milk. You can buy it from the market or you can make it at home. Take 2 ltr milk and put it in kadahi and let it be in the heat till it become a thick paste. But you have to stir it continuously till it becomes thick paste. When it becomes thick paste put it in one bowl and keep it in the fridge for one hour. I will suggest you to buy ready made khoya from the market because this preparation takes long time and efforts - you have to stir it countinuously.

Method :

  1. Wash the carrots, peel of the skin and wash it again.
  2. Now grate the carrots if you do not have the greator you can use blender also.
  3. Take a kadahi keep it on the gas put 2 tbsp pure ghee in the kadahi after two seconds put greated carrots in the kadahi and stir it continuously. Carrorts will leave their own water when it will become hot and we have to cook the carrots till all the water evaporates. Once the water evaporates put sugar in the carrot and mix it well, sugar will also leave its water and now again we cook till water evaporates.
  4. In the mean time you can put some quantity of dry fruits in it. Once the carrots become thick then we have to great the Khoya and put it in the carrots and mix it well and cook for 2 - 3 minutes.

Serving:

Remove the Gajrella in a big tray, decorate it with rest dry fruits and silver foil and serve hot.
