Carrot-Coconut Raita

Ingredients

2 Carrots
4 tsps grated Coconut
1 medium sized Onion
Salt to taste
Chilli powder as per your taste
A pinch of Hing
Yogurt (thick consistency)
Mustard seeds
1 tsp Oil

Method

  1. Grate the carrot.
  2. Cut onions fine.
  3. In a skillet take a little oil, and season with some mustard seeds. When they splutter, add onions and fry till transparent.
  4. Then add the grated carrot and fry till it gets slightly tender.
  5. Add salt and chilli powder and a pinch of hing.
  6. Add the coconut. Mix it all well.
  7. Let it cool. Add this to the yogurt.
  8. Serve chilled
