Bottlegourd Raitha
Ingredients
One fresh Bottle Gourd , peel the skin and chop finely.
Two cups of home made Yogurt if possible, else use store bought, plain
yogurt.
Two Green Chillies
Half a bunch of Coriander, chopped finely
One spring of Curry Leaves
1 1/2 teaspoon Mustard seeds
1 teaspoon Black Gram or Urad Dal with skin.
1/4 of teaspoon Hing
Pinch of Turmeric
Salt to taste
Two tbsp of Olive Oil
Method
- Heat the oil, add urad dal, after few seconds, add mustard seeds, hing and
cover. Let every mustard seed pop, I think this is important for taste.
- Add curry leaves and green chillies, saute them a little, then add the
chopped bottle gourd and salt, cover and cook on low or medium heat stirring
at times. Once the vegitable is soft, transfer it into a mixing bowl and
leave aside to cool.
- In another mixing bowl beat the yogurt into a smooth
consistency and stir it into the vegetable after it has cooled down.
- Transfer the raita into a serving bowl, sprinkle with finely chopped curry
leaves and serve.
Serves well with Rice or Chapati.
