Bottlegourd Raitha

Ingredients

One fresh Bottle Gourd , peel the skin and chop finely.
Two cups of home made Yogurt if possible, else use store bought, plain yogurt.
Two Green Chillies
Half a bunch of Coriander, chopped finely
One spring of Curry Leaves
1 1/2 teaspoon Mustard seeds
1 teaspoon Black Gram or Urad Dal with skin.
1/4 of teaspoon Hing
Pinch of Turmeric
Salt to taste
Two tbsp of Olive Oil

Method

  1. Heat the oil, add urad dal, after few seconds, add mustard seeds, hing and cover. Let every mustard seed pop, I think this is important for taste.
  2. Add curry leaves and green chillies, saute them a little, then add the chopped bottle gourd and salt, cover and cook on low or medium heat stirring at times. Once the vegitable is soft, transfer it into a mixing bowl and leave aside to cool.
  3. In another mixing bowl beat the yogurt into a smooth consistency and stir it into the vegetable after it has cooled down.
  4. Transfer the raita into a serving bowl, sprinkle with finely chopped curry leaves and serve.

Serves well with Rice or Chapati.
