Brinjal Curry

Ingredients

Brinjal of long size - 1/2 Kg
Onion-1
Green Chilli paste or cut 3-4 Green Chillies into small pieces
Ginger Garlic Paste
Curry Leaves (optional)
Cilantro
Cumin Seeds -1/2 tbsp
Mustard Seeds-1/2 tbsp
Oil
Turmeric Powder
Salt to taste
Water with Salt mixed.

Method:

  1. Cut Onion into small pieces and keep it aside.
  2. Cut Brinjal into long medium pieces and keep the pieces in salt water.
  3. Heat the oil in kadahi.
  4. Add Jeera/Cumin, Mustard. When they start spluttering add onions and turmeric powder.
  5. Let the onions cook for 1-2 minutes.
  6. Add Ginger/Garlic paste now or you can add after adding the brinjal pieces.
  7. Add chilli paste (preferrably) or cut chillies into it.
  8. Cook the mixture for 1-2 minutes to get rid of the smell of chillies and onions.
  9. Now add the brinjal pieces. Throw the salted water.
  10. Add Salt. Cover them and let them deep fry on slow heat for 15-20 minutes.
  11. Finally sprinkle with the cut cilantro to get the aroma.
You can eat with Chapati or Rice. Enjoy the Food!
