Brinjal Curry
Ingredients
Brinjal of long size - 1/2 Kg
Onion-1
Green Chilli paste or cut 3-4 Green Chillies into small pieces
Ginger Garlic Paste
Curry Leaves (optional)
Cilantro
Cumin Seeds -1/2 tbsp
Mustard Seeds-1/2 tbsp
Oil
Turmeric Powder
Salt to taste
Water with Salt mixed.
Method:
- Cut Onion into small pieces and keep it aside.
- Cut Brinjal into long medium pieces and keep the pieces in salt
water.
- Heat the oil in kadahi.
- Add Jeera/Cumin, Mustard. When they start spluttering add onions and
turmeric powder.
- Let the onions cook for 1-2 minutes.
- Add Ginger/Garlic paste now or you can add after adding the brinjal
pieces.
- Add chilli paste (preferrably) or cut chillies into it.
- Cook the mixture for 1-2 minutes to get rid of the smell of chillies
and onions.
- Now add the brinjal pieces. Throw the salted water.
- Add Salt. Cover them and let them deep fry on slow heat for 15-20 minutes.
- Finally sprinkle with the cut cilantro to get the aroma.
You can eat with Chapati or Rice. Enjoy the Food!
